Part of a new series of releases from Orkney's Highland Park distillery. August 2019 Release is the first edition of the famous 21 year old to be launched since the age statement was discontinued in 2009. Each Whisky will be released in batches with information about the cask breakdown listed on each bottle.
This firat release has been matured in six first-fill Sherry seasoned European oak casks, four first-fill Sherry seasoned American oak casks and five refill casks, before being bottled at 46% abv.

Tasting Notes
Colour
Deep amber with copper highlights and a mahogany-tinted edge, glowing with sherry-warmed warmth.
Nose
Sumptuous sherry-driven aromas: dried fig and raisin mingle with orange zest and toasted almond, folded into rich toffee and dark chocolate. A whisper of peat smoke and sea breeze lends a maritime edge, while vanilla, cinnamon and polished oak give refined, aged sweetness that invites further exploration.
Palate
Silky and full-bodied on the palate, sherry-influenced notes of dark fig and date, orange zest, and toffee, with milk chocolate accents. Spices—cinnamon, clove—intertwine with polished oak and a whisper of peat. Rich and layered, the sweetness is balanced by refined tannins, leading to a long, warming finish.
Finish
Long, velvety finish of rich dried fruit and fig, tempered by sherry sweetness. Orange zest, cinnamon and dark chocolate unfold, with a whisper of gentle peat smoke and warm oak. The elegance endures, leaving a toasted, honeyed warmth that lingers.
