Chichibu distillery was founded in 2004 by Ichiro Akuto, and has been operational from 2008, it was the first new Japanese distillery since 1973. Ichiro Akuto is the grandson of the founder of the lost distillery at Hanyu.
Chichibu is located near the site of the former Hanyu distillery.
Distilled in 2012, this Single Malt from Chichibu enjoyed maturation in a single Pinot Noir wine cask. Bottled at cask strength, only 205 bottles were produced. This Whisky has plently of red fruit and subtle medicinal notes.

Colour
Deep amber with coppery highlights and a soft ruby glow.
Nose
Red fruit dominates: ripe cherry, cranberry and strawberry with a wine-soaked sweetness from the Pinot Noir cask. Subtle vanilla and delicate oak weave through, while a faint medicinal note adds a refined, herbal scaffold. The aroma is vibrant, polished, and inviting, hinting at the strength to come.
Palate
On the palate it bursts with red fruit—bright cherry, raspberry and cranberry—woven into wine-soaked velvet. At cask strength, it remains remarkably smooth, delivering a tactile warmth and fine, integrated tannins. A subtle medicinal edge threads through the fruit, giving a precise, lingering spice and a long, cherry-tinged finish.
Finish
Long, wine-kissed finish of red berries—cherry and raspberry—paired with a gentle, warming spine from cask strength. Subtle medicinal spice fades into polished tannins, leaving a dry, elegant pull and a final whisper of oak and fruit.
