The Falcon is a limited-edition New Zealand single malt created from a trinity of carefully selected ex-Oloroso sherry, ex-bourbon and ex-Pinot Noir casks. Bottled at 52% ABV, it brings together notes of burnt toffee, vanilla cream, sun-scorched nectarine and pepper, balancing rich sweetness with fruit and gentle spice. Limited to 1,501 bottles and presented in a substantial oak display frame, it is one of Cardrona’s standout small-batch releases.

Tasting Notes

Colour

Deep amber with coppery highlights and a warm honey-gold glow.

Nose

Tri-cask aromas lift with burnt toffee and vanilla cream, braided with bright nectarine and a peppery edge. Rich, inviting and poised, the nose hints at depth from Bourbon, Oloroso and Pinot Noir casks.

Palate

Velvety and rich, the palate opens with burnt toffee and vanilla cream, evolving into sun-warmed nectarine that glides across the tongue. A refined pepper carries the spice, while the bourbon, Oloroso and Pinot Noir cask harmony yields depth, balance and a lingering orchard-fruit finish.

Finish

Long, luxurious finish of burnt toffee and vanilla cream, with sun-warmed nectarine and a peppery spark that lingers. Sweetness gradually dissolves into a silky, warming glow that caresses the palate.

Cardrona
Cardrona was founded by Desiree Reid, who began studying distillation in 2011 before selling her farming business and moving to Wānaka in 2013. The distillery was built in the Cardrona Valley, in New Zealand’s Crown Range, with the first spirit running on 23 October 2015 and the first cask laid on 5 November that year.
