Colour
Bright pale gold with a sunlit straw glow and a delicate amber edge, evoking coastal light and a glassy, sun-warmed sheen.
Nose
A briny, coastal bouquet of heavy peat and smoke, with white pepper, caraway and sauerkraut. Yeasty sourdough underpins sea salt and vanilla, while hints of sooty pear drops and green olives add a savory, briny edge.
Palate
On the palate, white cabbage and caraway seed ride an oily On the palate, white cabbage and caraway ride an oily, briny delivery, with white pepper and vegetal green peppers, a touch of sooty peat smoke and a sweetness of vanilla. Preserved lime, pickle juice and a lingering salty sea breeze echo through the finish.
Finish
Green peppers ride the final wave of sooty peat, marrying green olives with salty pickle juice, bright lime cordial, grassy herbs, and a lingering kiss of vanilla pods.
