Tasting Notes
Colour
Rich, deep amber with coppery glints and a mahogany-tinged glow, hinting at sherry’s darkest sweetness.
Nose
Intense peat and coastal brine rise from the glass, mingling with iodine and medicinal smoke. A sultry sherried sweetness unfolds—dark fruit, fig, raisin, cocoa and spice. At cask strength, warming leather and polished oak whisper through the exuberant peat, leaving a crisp sea-salt echo.
Palate
Caol Ila at cask strength pours a smoky, maritime palate where iodine and peat sharpen the senses, then surrender to sherry-dusted sweetness. Rich fig, raisin and plum mingle with toffee, cocoa and toasted spice, while a briny lift of salted caramel threads through a velvety, waxy texture. Long, warming finish of smoke, ash and espresso.
Finish
Long, warming finish that lingers with signature Caol Ila peat and sea breeze, tempered by lush sherry sweetness. Echoes of dark chocolate, dried fig, and spice unfold slowly, while a coastal resin and leather note glides through the tail, leaving a satisfyingly persistent, smoky-sweet echo.
