Tasting Notes

Colour

Deep, burnished amber with coppery highlights and mahogany undertones.

Nose

Peat smoke and iodine rise with a briny coastal lift, framed by a warm sherry glow. Raisined figs, prunes and dark chocolate mingle with toasted almond and a hint of orange zest. Rich, resinous and velvety, the high ABV coats with peppery warmth, leaving a long, smoky-dried fruit finish.

Palate

Bold and velvety on the palate, a fierce wave of peat smoke softened by luscious sherry. Dried fig, prune and dark chocolate mingle with roasted almond and a touch of orange zest. Rich, resinous oak, coffee notes, and a saline, coastal bite anchor the sweetness, delivering a long, warming finish with lingering smoke and cinnamon-spice.

Finish

Long, warming and richly sherried, the finish carries coastal peat and smoke into a cascade of dried fruit, orange zest and dark chocolate. Nutty, resinous notes linger, coating the palate with a cocoa-tinged warmth.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
