The first cask ever bottled from the new Bonnington distillery, the first distillery in Scotland’s historic capital Edinburgh for over 100 years. This heavily peated edition was fully matured in Virgin Oak barrel #0779 and bottled at cask strength of 64.8%. Only 246 bottles.

Tasting Notes

Colour

Rich copper-gold amber with a luminous, sunlit glow and honeyed warmth from the virgin oak.

Nose

Dense peat smoke swirls with medicinal iodine and ash, carried on sea-salt air. Virgin oak adds vanilla cream and toasted spice as citrus zest and green apple brighten the nostrils. Subtle coconut and peppery warmth linger, signaling a bold, cask-strength edge.

Palate

Bold peat smoke dominates the palate, backed by an oily, full-bodied texture at cask strength. Virgin Oak delivers vanilla, toffee and hints of spice, while pepper, citrus zest and maritime ash cut through the sweetness. The finish is long and warming, with persistent smoke, dark fruit and a touch of caramel.

Finish

Long, warming finish of peat smoke and ash, woven with vanilla from virgin oak. A lingering spice builds, fading to resinous wood and a quiet coastal warmth.

Bonnington
(BON-ing-tun) Bonnington was commissioned in 2019 and began production in March 2020 on Graham Street in Leith, close to the historic John Crabbie & Co. whisky business. It was the first single malt distillery in Leith for nearly 100 years, bringing whisky production back to an area once strongly associated with bonded warehouses, blending and export. During construction, archaeological remains linked to old fortifications and Bonnington House were uncovered beneath the site, later inspiring the distillery’s citadel-style icon.
