Matured in Pedro Ximenez sherry casks, this limited release from the Bonnington Distillery is non-chill filtered and natural in colour. The PX cask has imparted rich, fruity and warming notes of red berries, pick and mix, fresh oak and sweet sugar. A superb dram to experience.

Colour

Deep, natural amber with mahogany undertones and a warm ruby-copper glow.

Nose

Sweet sugar and pick-and-mix mingle with fresh oak and a hint of green wood. An inviting, fragrant nose that hints at fruity warmth and the timber-driven richness to come.

Palate

Fresh, subtle red fruit on the palate, lightly dusted with sugar on berries.

Finish

A long, oak-kissed finish with bold tannins and a saline edge, leaving a lingering, warm timber embrace.

Bonnington
(BON-ing-tun) Bonnington was commissioned in 2019 and began production in March 2020 on Graham Street in Leith, close to the historic John Crabbie & Co. whisky business. It was the first single malt distillery in Leith for nearly 100 years, bringing whisky production back to an area once strongly associated with bonded warehouses, blending and export. During construction, archaeological remains linked to old fortifications and Bonnington House were uncovered beneath the site, later inspiring the distillery’s citadel-style icon.
