Tasting Notes
Colour
Dark mahogany amber with coppery highlights and a wine-red core.
Nose
Deep, opulent notes of mulled oloroso sherry mingle with orange rind and sour cherry, folded with liquorice and espresso. Savory whispers of leather and Bovril creep in alongside dark treacle, signaling a mature, sherry-drenched Macallan with antique-age polish.
Palate
Dark manuka honey and treacle weave with charred anise and espresso, edged by meat-stock depth and salami notes. Sherry vinegar adds tang, while malt loaf, sticky dates and ginger marmalade mingle with blood orange, delivering a bold yet balanced savoury-sweet mouthfeel.
Finish
Like the best Oloroso sherry poured over a trifle, the finish mingles dark roast coffee beans, creamy ginger, dark chocolate and liquorice with a dry, savoury meat glaze and balsamic-soaked nuts.
