A super-premium Irish Whiskey, finished in rum casks from the tropical Caribbean island of Saint Lucia. A unique marriage of Single Malt and Single Pot Still triple-distilled Whiskey, crafted from a mash bill made entirely of Irish barley.

Initially matured in American oak bourbon barrels, before being finished in Chairman’s Reserve rum casks for an additional 6 months. Decadent and tropical, the sweet St Lucian rum cask delivers a spectacular treat for the senses.

Colour

Rich sunlit amber with copper-gold highlights and a honeyed glow.

Nose

Exotic rum notes rise with apricots and sun-warmed summer fruits, a tropical bouquet that hints at creamy sweetness and Caribbean sunshine.

Palate

An exuberant flood of tropical fruit on the palate—ripe mango, pineapple and guava—balanced by vibrant spices: clove, nutmeg and vanilla. Creamy, with a gentle oak underlay from the rum cask, the fruit-sweet finish grows into banana and fig with a lingering Caribbean warmth.

Finish

Fig and banana meld with oak spices, delivering a Caribbean-inflected finish—tropical sweetness intertwined with spice and a lingering warmth.

The Irishman was created by Bernard and Rosemary Walsh as part of Walsh Whiskey’s move into Irish whiskey in the mid-2000s. It was the company’s first whiskey brand, launched in 2007, and it drew on older Irish whiskey styles at a time when the category was still rebuilding its premium reputation.
