Spirit of Birmingham’s Dó is a single malt drawn from a single Staffordshire oak cask, with an outturn of 321 bottles. As one of the distillery’s earliest whisky releases, it also carries a bit of extra interest as part of Birmingham’s first modern whisky story.
Full maturation in Staffordshire oak puts the cask front and centre here, bringing plenty of spice, toasted wood and sweetness to the spirit. That style of maturation should suit drinkers who enjoy younger English whisky with a more assertive oak influence, where the freshness of the spirit is matched by plenty of structure and warmth from the wood.

Colour
Deep amber with honey-gold and bronze highlights, a warm, toasted-oak glow that hints at the spice and sweetness within.
Nose
Toasted cereal and warm oak lead the nose, with honey-roasted almonds, candyfloss apples and a drift of sticky toffee pudding.
Palate
Rich mouthfeel, spiced walnuts, chocolate caramel apple, cherry drops, chewy.
Finish
A long, evolving finish of gentle clove and apple, with burnt orange zest. Rich honey spice deepens with each sip, leaving a warm, lingering glow on the palate.
