Tasting Notes
Colour
Pale straw-gold with a delicate honeyed glow, edging into warm amber at the rim.
Nose
Silky and fruit-forward, this nose opens with crisp orchard apples and pears, bright citrus zest, and a touch of honeyed florals. Subtle almond and marzipan ride atop delicate oak, while the sherry cask depth emerges softly—raisin, cocoa nib, and spice weaving through a delicate floral trace.
Palate
Silky, oil-rich palate with substantial weight. Green apple and pear form a bright core, while rich sherry notes of fig, raisin and orange zest deepen the profile. Toasted almond, honey and a touch of cocoa weave through delicate spice—nutmeg and clove—supported by soft oak and a subtle mineral lift. At 55.2% ABV, a warm, persisting glow lingers on the palate.
Finish
Long, refined finish with honeyed citrus and orchard fruit, enriched by sherry sweetness—prune and fig—supported by subtle oak spice and mineral notes, fading to almond and a whisper of dark chocolate.
