Each bottling of Old & Rare has been matured to perfection, so due to the angels’ share there are comparatively few examples to emerge from each cask.
Presented in a highly distinctive squat bottle, each expression comes beautifully packaged in a specially crafted wooden box. The personal tasting notes of our expert “nose” are included to complement the views of each individual taster. It goes without saying that each cask remains unadulterated by excessive filtration or added caramel.
Although each sip from an Old & Rare cask is an exquisite experience the pleasure must be tempered with a little sorrow, due to the fact that such a taste can never be exactly replicated again.

Tasting Notes
Colour
Deep amber with coppery highlights and a hint of mahogany, a warm, vintage glow.
Nose
Opulent sherry perfume with figs and dark raisins at the core, brightened by orange zest, treacle and roasted nuts. Rich vanilla and toffee mingle with velvet oak as cinnamon and clove weave spice, with a whisper of leather and tobacco lingering.
Palate
Silky, full-bodied palate reveals rich dried fruit, walnut and toffee, brightened by orange zest and vanilla. Sherry influence deepens the fruit, while gentle spice—cinnamon and clove—dances with creamy oak. The finish is long and refined, with milk chocolate, coffee notes and warm oak lingering, a testament to patient, unadulterated maturation.
Finish
Opulent and long, the finish carries ruby fruit and dried fig, underpinned by sherry sweetness and toasted spice. Rich cocoa and polished oak glide through a satin mouthfeel, with a trace of leather and orange zest that fades to a warm, lingering glow. A refined, contemplative end that echoes festive fruitcake and the quiet dignity of well-matured cask maturation.
