Each bottling of Old & Rare has been matured to perfection, so due to the angels’ share there are comparatively few examples to emerge from each cask.
Presented in a highly distinctive squat bottle, each expression comes beautifully packaged in a specially crafted wooden box. The personal tasting notes of our expert “nose” are included to complement the views of each individual taster. It goes without saying that each cask remains unadulterated by excessive filtration or added caramel.
Although each sip from an Old & Rare cask is an exquisite experience the pleasure must be tempered with a little sorrow, due to the fact that such a taste can never be exactly replicated again.

Tasting Notes
Colour
Deep amber with coppery glow and mahogany undertones; a warm chestnut core that hints at sherry influence.
Nose
Opulent and brooding, the nose opens with a rich sherry glow—raisins, fig and prune layered with dark chocolate and orange zest. Cinnamon and clove mingle with nutmeg, while toasted almond and treacle add sweetness. Waxy malt, leather and polished oak anchor the aroma, as a warm, long finish lingers.
Palate
Opulent and weighty, the palate delivers dark fig and plum bathed in sherry’s toffee and dried-fruit sweetness. Waxy, mouthcoating texture builds with cinnamon, clove and nutmeg, supported by polished oak and sturdy tannins. Dried orange zest and cocoa emerge mid-palate, hinting at leathered richness. The finish is long and contemplative, slowly fading with elegant spice and a refined, lingering warmth.
Finish
Opulent, long finish: dried plum and fig mingle with dark chocolate and toasted oak, kissed by a whisper of sherry. Spices like cinnamon and clove linger as the velvety fruit fades, leaving tobacco, resin and a warm, peppery glow that lingers well beyond the last sip.
