Tasting Notes
Colour
Rich golden-amber with burnished copper highlights.
Nose
Peat smoke and sea air mingle with lemon zest and vanilla from Bourbon casks. Oloroso sherry adds dark fruit—raisin and fig—with a hint of cocoa, all wrapped in toasted oak and a subtle salt-kissed sweetness. A bright yet smoky Islay nose with inviting richness.
Palate
Peat smoke and coastal salt usher in a creamy backbone of vanilla and toffee from the Bourbon cask, while Oloroso Sherry adds depth with dried fruit, raisin and dark chocolate. Citrus zest, almond and gently spicy oak mingle mid-palate, finishing with a lingering, oaky-sweet warmth and a whisper of smoke.
Finish
Long, nuanced finish of coastal peat and resinous smoke, unfolding into dark fruit, cocoa and orange zest. Sherry sweetness lingers with gentle oak spice, fading to a saline, mineral echo and a final whisper of pepper.
