- Highland Park 12 Year Old
Matured predominantly in European and American sherry seasoned oak casks, our iconic 12 Year Old single malt whisky is spicy and well-rounded, packed with the flavours of sun-kissed Seville oranges and rich fruitcake spiced with cinnamon, nutmeg and cloves; you’ll find molten heather honey in this whisky’s waves of heathery peat smoke. Why not try it with a handful of wasabi peas on the side or alongside a sizzling, pan-fried rib-eye steak or with smoked salmon and sour cream.
Flavours: Heather honey, Rich fruitcake, Winter spices, Seville oranges, & Aromatic smoky peat
Try with: Haunch of venison, chocolate ginger biscuits, soft cheeses such as French Brie and even Japanese sushi and wasabi (yes, really!).
- Highland Park 15 Year Old
This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brûlée, heather honey and crumbled cinnamon, intensely fruity notes follow – fresh pineapple dressed with a scattering of sun-kissed lemon zest. There’s a hint of freshly baked sponge cake too, warm from the oven, and you’ll find cinnamon again, but toasted shards this time. Citrus and vanilla notes linger in the aromatic waves of peat smoke.

- Highland Park 18 Year Old
Matured in a high proportion of first-fill sherry seasoned European and American oak casks, this superb 18 Year Old single malt pays tribute to our 5 keystones of production and presents a sophisticated medley of ripe cherries dusted with bittersweet cocoa, freshly harvested honeycomb and candied orange peel. There’s a whisper of Orkney’s salty seaspray in the aromatic peat smoke.
Flavours: Cherries, Dark chocolate, Toffee, Marzipan, Heather honey, & Aromatic peat smoke
Try with: Meaty fish like mahi mahi or swordfish cooked with Indian spices (think cardamom and ginger – surprisingly good!), cold meats with ginger chutney, and citrus fruit puddings.

Tasting Notes
Colour
Radiant amber to copper-gold, a warm, honey-kissed glow that deepens with age. A glossy, sunlit bronze sheen speaks of sherry cask maturity.
Nose
An opulent nose of sun-warmed Seville orange and heather honey, with winter spices and aromatic peat smoke from the 12 Year. The 15 Year adds crème brûlée, vanilla, toasted cinnamon, pineapple and lemon zest, while the 18 Year unfurls ripe cherries, dark chocolate, toffee and marzipan, with a whisper of sea-salted peat. A luxurious, multi-layered bouquet of sherry sweetness, fruit and warm spice.
Palate
An evolving palate gathers the three ages into a refined chorus: honeyed heath and Seville orange from the 12 with warm spices; crème brûlée, pineapple and vanilla weaving through the 15; and cherries, dark chocolate, marzipan and toffee in the 18, all wrapped in aromatic peat and sherry sweetness, with a whisper of sea spray binding the finish. Luxuriously balanced, layered and enduring.
Finish
An expansive, lingering finish of aromatic peat smoke and heathery honey, evolving into warm vanilla and citrus zest, then revealing ripe cherry, cocoa and candied orange. A delicate sea-salt whisper threads the long, satin-smooth afterglow of this Highland Park collection.
