Beginning its life as a Fino, Amontillado Sherry undergoes an additional maturation period without a ‘flor’ layer. This stage of oxidative ageing develops a richer colour and more robust characteristics.
Using hogsheads that previously held this well-aged style of Sherry, the subsequent single malt brims with dark cherries, toasted hazelnuts and caramel sauce.

Tasting Notes
Colour
Deep copper-amber with mahogany edges, a warm, sunlit amber glow that carries dusky chestnut tones and a hint of burnt caramel.
Nose
Soft orchard fruits mingle with cinnamon and heather honey, layered with butterscotch, hazelnuts and a touch of dark tobacco.
Palate
Honeycomb, maraschino cherries and dried apricots, followed by poached pears, blood orange, mixed nuts and cinnamon.
Finish
Long, luxurious finish with dark cherry and dried apricot sweetness, tempered by honeyed caramel. Nutty hazelnuts linger alongside cinnamon, while a trace of orange zest carries the fruit into a softly sherried, honeyed finale.
