Distilled on 29 September 1989 and bottled in February 2021 at 49.1% ABV, this 31-year-old GlenAllachie was drawn from a single Rioja wine barrique (cask #4011) and yielded 304 bottles. The release formed part of a special batch of UK exclusive single casks selected by master distiller Billy Walker.

Colour

Deep amber-gold with coppery mahogany undertones and a ruby-tinged glow.

Nose

Ripe bananas mingle with plump raisins and pineapple, lifted by a delicate whisper of mocha.

Palate

Brimming with raisins and almonds, followed by pineapple, mocha and cinnamon.

Finish

Long, warm finish with raisin sweetness and almond linger, evolving into pineapple, mocha and cinnamon, fading to a spicy, oak-kissed warmth.

(glen-AL-a-key) Built in 1967 near Aberlour, it spent much of its life producing whisky for blends rather than building a big name as a single malt in its own right. That changed in 2017, when Billy Walker, Trisha Savage and Graham Stevenson bought the distillery and began reshaping it around a more flavour-led, hands-on vision.
