Billy Walker is leading the way with innovation and is passionate about experimenting with unorthodox cask types, one of which being a Peated Bourbon barrel (2012 #806890).
Hand-selected by Master Distiller Billy Walker, this golden malt was initially aged in a fresh ex-Bourbon cask before being reracked into a first-fill sherry hogshead for secondary maturation. Continuously monitored and evaluated, the spirit was then transferred into an American oak cask which had previously matured a heavily peated spirit distilled at GlenAllachie. This unusual cask type has enriched the spirit with peat influence, offering hints of smoke on the nose and caramelised sugar on the palate.

Layers of smoked pine nuts, ginger and cigar box, followed by heather honey, soft spice and burnt brown sugar.
Palate
Lashings of butterscotch, ginger and toasted almonds, with delicate notes of caramelised sugar, dark chocolate and black pepper.
