Tasting Notes
Colour
Golden amber with coppery glints
Nose
An unapologetically funky nose, opening with coastal, island-inspired hints reminiscent of Ledaig, then revealing buttermilk pancakes and salty porridge. Fennel, celery and spring onion weave through oatcake, with a subtle sauerkraut or smoked-cheese rind note adding savory depth.
Palate
Salty ham, green fig, spring onion, oatmeal biscuits, cream cheese, celery sticks, apple chutney and fennel.
Finish
Salty and vegetal, this finish glimmers with green fruit, a delicate smoke and earthy edge, and that unmistakable spring onion lift lingering on the palate.
