Caol Ila Distillery is near Port Askaig, looking across the sound of Islay to neighbouring Jura. The whisky is very well respected for both its distinctive, smoky Islay style and elegant, fruity balance. This Islay dram was distilled in 2009, the previous Year of the Ox, and shares the traits of those born under this Zodiac sign with an honest and earnest character. The nose is initially deceptively gentle, offering traces of icing sugar and earthy smoke, though time in the glass allows the peatiness to show a muscular coastal phenolic character. The palate gives damp wool, icing sugar, delicate floral notes, and progressively more peat smoke! The finish is unmistakably Islay, fading slowly with flavours of kippers, tar and that lingering smoke. A quietly confident dram suitable for contemplation on the Year of the Ox that lies ahead.
