About Spirit of Yorkshire
Spirit of Yorkshire was founded in 2016 by farmer and brewer Tom Mellor and business partner David Thompson. Based in Hunmanby, near Filey on the Yorkshire coast, it grew from the Mellor family’s farming background and Wold Top Brewery, using home-grown barley and local water to create Yorkshire’s first single malt whisky.
Its whisky is released under the Filey Bay name, with the first casks filled in 2016 and the first official whisky bottled in 2019. Production is built around a field-to-bottle approach, with distillation in copper pot stills and a style that leans towards soft fruit, creaminess and gentle cask influence rather than simply copying Scotch whisky traditions.
