London based micro distillery Bimber produce premium, small batch, hand crafted single malt whiskies. They grow their own barley, which is traditionally floor malted, hand-mashed, and fermented slowly for seven days in wooden washbacks that were handmade at their own cooperage. They are one of the only whisky distillers in the world to use direct fire to heat their small copper pot stills, and mature the whisky in carefull selected casks.
This small batch release was matured in re-charred American oak casks that were hand charred at their own London based cooper. The deep charring process caramelises the wood sugars and influences the whisky by impartin sweet, rich, smooth, and fruity flavours.

Tasting Notes
Colour
Deep amber with a warm copper-gold glow and a hint of mahogany.
Nose
Orchard fruits mingle with spit-roasted pineapple, honey, nougat and cookie dough. Oak smoke and charred wood drift over the bouquet, with cinnamon and pepper spicing adding a lively, warming lift.
Palate
Red apples and ripe pears sit with banana bread and pineapple juice. Caramel and butterscotch sauce weave with vanilla pods, while layered pepper and ginger spicing add warmth, finishing with a characterful note of charred oak.
Finish
Enduring wood smoke lingers as fading orchard fruits give way to a poised, oaky dryness that polishes the palate.
