A vatting of carefully selected EX-BOURBON OAK CASKS. Bourbon barrels are constructed from Quercus Alba, or white oak, commonly known as American oak. This wood type complements the underlying character of our accessible fruit forward spirit, imparting sweet, rich vanilla and caramel flavours alongside perfectly balanced spice. Every cask has been specially selected and married together in Bimber's hand-made oak vat, before being bottled.

Nose
Green apple peels mingle with dried stone fruits, while milk-soaked cereals lend creamy sweetness. Vanilla sponge cake and desiccated coconut drift with buttered toast, creating a bright, dessert-like aroma and a comforting hint of toasty warmth.
Palate
An impactful combination of bright orchard fruits, baked apricots and sprightly pepper spicing sit with gently charred oak and creamy vanilla.

Lasting sweetness tempered by persistent spicing.
