About Bimber
Bimber was founded in London in 2015 by Dariusz Plazewski, drawing on his Polish distilling background; the name comes from the Polish word for moonshine. The distillery was built around traditional, hands-on whisky production at a time when English single malt was still a young category, with Bimber’s first casks laid down on 26 May 2016 and its inaugural single malt, The First, released in September 2019.
Production starts with barley from a single farm, which is floor malted, hand mashed and fermented for seven days in wooden washbacks made at the distillery’s own cooperage. Bimber uses direct-fired copper pot stills and bottles on site, with releases often showing a fruit-forward London single malt style across bourbon, sherry, virgin oak, wine cask and limited single cask bottlings.
