The second batch of Waterford's Ballykilcavan Single Farm Estate Whisky. Using 100% Irish malted barley, Waterford’s Single Farm Origin series is an uber-provenance range of limited edition natural whiskies that explore Irish “teireoir” – one farm, one place at a time.
No colouring, chill-filtration or additives are used whilst long fermentation and slow distillations have created an impactful flavour.
The second release from Ballykilcavan was distilled from barely grown by David Walsh-Kemmis in the Irish barley heartlands to the west of The Barrow in Co. Laois. His fertile fields are sheltered by ancient woodland on some of the best soil in the region to grow malting barley.
For maturation 55% of the casks were first-fill American oak, 22% were premium French oak and 22.5% were previously used to age vin doux naturel (fortified wines). The second edition is almost four months older than the first with some of the first-edition spirit included.

Tasting Notes
Colour
Deep coppery-amber with burnished gold highlights and a warm, honeyed glow.
Nose
Red grapes on the nose, mingled with tilled earth and hints of dried fruit. An earthy, inviting aroma that hints at vineyard soil and subtle sweetness to come.
Palate
An oily, mouth-coating onset yields white pepper and apricot notes, deepened by spice and a rich toffee sweetness.
Finish
A dry, oily finish that lingers, tracing a spine of spice through dark chocolate and warm malt.
