Known locally as ‘the place of the lush grass’, the Sheestown farm has well-drained lowland soil and is owned by Phillip O’Brien, father of one of Waterford distillery’s workers. It’s a high-quality terroir that sits outside the historic town of Kilkenny.
Sheestown 1.2 is the second release from the distillation of the first barley harvest from Sheestown and undergoes a longer maturation than the 1.1 bottling. It also has a slightly different cask composition, which adds a fruity, honey note to the flavour; 33% were first-fill American oak, 19% virgin American oak, 25% premium French oak and 23% were previously used to age vin doux naturel (fortified wines).
Tasting Notes:
A golden appearance with oils that grip the glass. Honey and malty on the nose with pears, orange peel and sherry. Gentle spices and clove warm the palate with blood orange, honeycomb and ginger. A long finish with gentle spice and citrus that tingles the tongue.
