Out of necessity since the dawn of time, peat has been the primary fuel source in rural Ireland, with its sweet pungency familiar to generations gathered around the ancient hearths of thatch-roofed blackhouses. Farmer, & often illicit distiller, dried barley over peat smoke infusing the same heady aromatics, an ancient custom that died out from the 1850s. With this Single Farm Origin’s barley, Irish grown & Irish peated, Waterford return to the earthy, wild & raw tradition rooted in the distant past.

Tasting Notes
Colour
Golden amber with a warm copper edge, a sunlit honey hue that gleams with peat-inspired depth.
Nose
High-toned, vibrant peat smoke on a spring-morning breeze, with a coastal note of brine and oyster shells. Underneath, barley sugar sweetens the air as orchard fruits—crisp apples and pear skins—emerge, warming with a hint of hay as the glass opens.
Palate
Full-bodied, oily and unctuous, with grist, driftwood, campfire and creosote. Sheep’s wool warmth meets lapsang souchong tea, while juicy white peach and apple sauce brighten the mid-palate, delivering sweetness and a lingering smoky depth.
Finish
A lingering, complex finish of cigar tobaccos, green tea and tar.
