Inspired by the greatest Bordeaux châteaux and Champagne houses, Cuvée Concepts are our most complex and creative single malts. Our oldest vintages of Biodynamic barley – 2018 and 2019 – separately distilled and matured then layered by Head Distiller Ned like a single malt millefeuille. Each vintage brings its own unique characters; a harmony greater than the sum of its considerable parts.

Tasting Notes
Colour
Golden amber with sunlit honey hues.
Nose
Aromas of green apple and peaches mingle with hay and malted biscuits, lifted by white pepper. Barnyard notes drift with cherry tomatoes and dry soil, while birch and a whisper of light herbal tea and breadcrust complete a crisp, terroir-driven bouquet.
Palate
Pepper spice on a dry, chewy palate with breakfast cereals, lemon curd and grapefruit. Malted biscuits and porridge with cream give comforting heft, while green peppers and pesto add a verdant lift; herbal tea threads through to a soft, persistent finish.
Finish
Creamy and gently spiced, it dries into herbal notes that linger, an understated, Irish goodbye on the palate.
