Located in rural, windswept, western Denmark, Thy distillery (pronounced ‘Tu’) produces whisky from grains organically grown on the owners’ family farm. They control every step from field to barrel, including malting on-site; and are always experimenting with new approaches.

Tasting Notes

Colour

Rich golden amber with coppery highlights and a sun-warm bronze glow.

Nose

Aromatic and inviting, the nose opens with warm spices and pepper, tempered by honeyed sweetness and ripe banana. Subtle grain notes and a kiss of rye add comforting, sun-warmed depth to the aroma.

Palate

The palate centers a rye-bread core, lifted by eucalyptus, burnt orange, rosemary and thyme—a bright, herbal chorus that feels almost musical.

Finish

Aniseed and ginger close the voyage, leaving a bright, peppery finish that lingers with rye-spice warmth and a final, comforting glow.
