Chapter 16 from the Norfolk based St.George's distillery is my favourite so far and they seem to be just getting better with each release, a winning combination of peat smoke and Sherry wood and bottled at 6 years old.

Tasting Notes
Colour
Rich, deep amber with coppery glints and a warm mahogany edge.
Nose
Smoked mincemeat and tarry liquorice mingle with prunes soaked in PX sherry, roasted walnuts, aromatic tobacco, old leather, treacle toffee and minty dark chocolate, lifted by wood embers from a bonfire and honey-glazed smoked meats.
Palate
Dark treacle and ginger cake, with prunes and dates in dark sherry, chocolate-coated coffee beans, all wrapped in a smoky bonfire of peat, with a touch of spiced dark honey sweetness.
Finish
Bonfire night toffee and ginger cake linger with dark mocha, aromatic wood chips and roasted nuts, while tobacco and a whisper of blood orange marmalade on rye toast add brightness. Sweet, smoky and memorably warming, it closes with a lingering bonfire glow and velvet malt.
