This Highland single malt was matured in a refill sherry butt before being given a final two years maturing in a fresh Oloroso butt. The sherry wood is quite restrained on the nose with the fruity distillate displaying a mouthwatering array of zesty green fruit notes, the palate however leaves one in no doubt of the sherry maturation with thick dried figs and raisins mingling beautifully with grated apple and lashings of honey. A little water brings out bursts of wood spice and some of the citrus promised on the nose. Vibrant and fresh, a wonderful conversational dram.

Nose
Sherry is restrained on the nose, letting a mouthwatering surge of zesty green fruit take centre stage—green apple, lime zest and underripe pear. A delicate honey sweetness lingers, with a whisper of wood spice signalling the coming depth.
Palate
On the palate, sherry maturation sits in the foreground with thick dried figs and raisins weaving through grated apple and lashings of honey. A rich fruit core is brightened by wood spice and a citrus lift, especially with a splash of water. Vibrant, balanced and inviting.
Finish
The finish is long and luscious, with dried fig and raisin sweetness lingering against dusky oak. Honey notes glow as grated apple resurfaces, while a gentle spice and citrus lift carry through the final echo.
