Tasting Notes
Colour
Deep amber with coppery highlights and a mahogany edge, radiating a warm ruby glow.
Nose
Peppery strawberries, stewed plums, salted caramel, banana toffee, rum and raisin fudge, hints of a dunnage warehouse by the sea, tarry with polished oak, earthy coconut, new leather, brine and mocha completing this deep and well nuanced nose.
Palate
Sweet cured meats mingle with stewed berries and damson jam, peppery strawberry and a leathery, oily body. Aromatic tobacco, spicy coconut and rum-soaked caramelised banana weave through salted caramel and sugared almonds, finishing with elegant, aromatic wood smoke.
Finish
Cured meats and savoury notes linger, balanced by peppery red berries, aniseed and leather, with coal smoke and a maritime, salty-oily spine. Polished oak, rum-raisin, banana toffee and an earthy, dry finish.
