Cask Strength Single Cask

This 3 year old Single Malt was matured in a new American oak cask, to the heaviest char available, also known as ‘Crocodile Toast’ as the inside of the cask is charred so deep that it resembles the cracked skin of a crocodile.

There is an initial fruitiness on the nose, with crisp green apples and fresh peaches. Hints of pear drops, Demerara sugar and caramel. Medium bodied on the mouthfeel, with honey, sweet grains, and hints of roast peanuts. Spicy with nutmeg and white pepper.

Tasting Notes

Colour

Deep amber with honey-gold depth and coppery highlights, a toasted, sun-warmed glow.

Nose

Bright fruit-forward nose of crisp green apples and fresh peaches, opening with lively, sun-kissed fruit. Delicate hints of pear drops, Demerara sugar and caramel weave through, lending a subtle honeyed sweetness that invites the next sip.

Palate

Medium-bodied and gently velvety, the palate unfurls with honeyed sweetness and a shower of sweet grains, punctuated by roast peanut echoes. Nutmeg and white pepper spice lingers, while a toasty, caramel-edged finish nods to the Crocodile Toast oak.

Finish

Long, warming finish with honeyed caramel and vanilla lingering on the palate, slowly fading into a peppery glow of nutmeg and white pepper. Subtle oak char from the Crocodile Toast leaves a dry, oaken sigh that carries the memory of the 3-year maturation.
