This lightly peated dram showcases a unique six-part maturation. Peated and unpeated Isle of Raasay spirits are matured separately in first fill Rye Whiskey, Chinkapin oak and first fill Bordeaux red wine casks. A first of this cask combination in Scotch Whisky history.
Initially there is the lightly peated, aromatic smoke. This is followed by a mix of jammy fruits - cherry, apricot and blackcurrent. The flavour develops and becomes more complex, with a savoury spiciness of black pepper, cinnamon and sandalwood. This is rounded off with a sweeter spice; notes of crystalised ginger, vanilla, butterscotch and a hint of saltiness.

Rich, deep amber with a copper-gold sheen and a subtle ruby edge.
Nose
Lightly peated, aromatic smoke opens the nose, giving way to a lush bouquet of jammy fruits—cherry, apricot and blackcurrant.
Palate
Lightly peated smoke opens, giving way to jammy cherry, apricot and blackcurrant. The palate then unfurls savoury spice—black pepper, cinnamon and sandalwood—before a sweeter thread of crystallised ginger, vanilla and butterscotch, finishing with a delicate hint of saltiness.
Finish
Sweet-spiced; crystallised ginger, vanilla and butterscotch linger, with a gentle saline kiss. A warm, lingering finish that rounds out the dram.
