This lightly peated dram showcases a unique six-part maturation. Peated and unpeated Isle of Raasay spirits are matured separately in first fill Rye Whiskey, Chinkapin oak and first fill Bordeaux red wine casks. A first of this cask combination in Scotch Whisky history.
Initially there is the lightly peated, aromatic smoke. This is followed by a mix of jammy fruits - cherry, apricot and blackcurrent. The flavour develops and becomes more complex, with a savoury spiciness of black pepper, cinnamon and sandalwood. This is rounded off with a sweeter spice; notes of crystalised ginger, vanilla, butterscotch and a hint of saltiness.
