A single cask single grain release from the closed Port Dundas distillery, bottled by Signatory in their Cask Strength Collection range. Distilled on 26 June 1995, matured for 28 years in an ex-bourbon hogshead and bottled in December 2023. Only 215 bottles were produced, each individually numbered.

Tasting Notes
Colour
Rich golden-amber with a warm honey glow and subtle copper-bronze edges, reminiscent of caramel sunlight in a crystal glass.
Nose
Opulent vanilla and caramel dominate, layered with creamy custard and soft cereals. Pear and green apple notes drift alongside lemon zest, while toasted oak and a whisper of coconut add depth. A refined grain sweetness persists, inviting a measured sip of this ex-bourbon-aged single cask.
Palate
Silky and generous, the palate opens with vanilla-edged toffee, custard and white chocolate, soothed by a creamy cereal sweetness. Fruit notes of baked pear and orchard apple emerge, lifted by citrus zest. Layered with warm spice—white pepper, nutmeg—it’s full-bodied yet elegant, finishing with lingering vanilla, oak, and a gentle caramel persistence.
Finish
Long, warming and honeyed, with creamy vanilla and toffee giving way to oak and spice. Subtle citrus threads lift the finish as a faint waxy grain coats the tongue, ending in a peppery, caramel-sweet echo that lingers and slowly fades.
