Tasting Notes
Colour
Golden amber with coppery highlights.
Nose
Indulgent nose of cake sponge and salted shortbread, with a malty vanilla anchor. Notes of mixed candied peel, orange and mango curd mingle with lemongrass, ginger barley, and pear drops for a coastal, bright, citrus-kissed sweetness.
Palate
More sponge cake on the palate, with salted lime curd and herbal notes. Grassy barley and boiled sweets appear, perhaps wine gums. Vanilla icing sugar, green fig and a note of meringue round out a light, confectionary finish.
Finish
Key lime pie made with salted lime curd and Greek yoghurt, coastal herb garden, vanilla biscuits, custard powder and meringue with kiwi fruit.
