Tasting Notes
Nose
Sourkraut unfolds with briny vegetal seaweed, juniper and white pepper. Shellfish whispers through a salty, oceanic core—salted fish skin and oyster shells mingling with pickled lime and lemon thyme for a coastal, mineral lift.
Palate
A spicy and vegetal delivery (think green peppers with chilli flakes) Japanese bonito fish flakes, pink peppercorns, oily and salty on the mouthfeel, lime pickle, that sourkraut note again with some waxy citrus.
Finish
Chilli oil on shellfish, seaweed or cabbage like notes, salted pink grapefruit, aromatic herbs.
