Colour
Deep amber with coppery highlights and a warm, sun-kissed honey glow.
Nose
Sourkraut unfolds with briny vegetal seaweed, juniper and white pepper. Shellfish whispers through a salty, oceanic core—salted fish skin and oyster shells mingling with pickled lime and lemon thyme for a coastal, mineral lift.
Palate
Spicy and vegetal with green peppers and chilli flakes; Japanese bonito flakes and pink peppercorns; an oily, salty mouthfeel; lime pickle; and that sourkraut note returns with waxy citrus.
Finish
Chilli oil lingers, coating the palate with briny shellfish and seaweed, a cabbage-like echo. Salt-kissed pink grapefruit emerges, while aromatic herbs weave a bright, savory finish.
