Tasting Notes
Nose
Sourkraut, vegetal/seaweed notes, juniper, white pepper, shellfish, pickled lime, salty fish skin, oyster shells, lemon thyme.
Palate
A spicy and vegetal delivery (think green peppers with chilli flakes) Japanese bonito fish flakes, pink peppercorns, oily and salty on the mouthfeel, lime pickle, that sourkraut note again with some waxy citrus.
Finish
Chilli oil on shellfish, seaweed or cabbage like notes, salted pink grapefruit, aromatic herbs.
