Each year as part of the Parker's Heritage Collection, Heaven Hill select a special whiskey to be released in the name of their late Master Distiller Parker Beam. The barrels selected for this series include Bourbon, Rye, and Wheat Whiskeys, among others, and are some of the finest and most diverse American Whiskeys ever produced. They are a fitting tribute to the expertise of Parker Beam.
The 2011 edition of Parkers Heritage Collection, 5th edition. is cognac cask finished Bourbon, the first of it's kind for this release. The mash bill is the same as that used for Evan Williams single barrel in this instance.
This is a 10 year old Bourbon that has been finished for 4 months in Grand Cru cognac casks from the Frapin cellars. Bottled at 50% abv and non chill filtered.
Vanilla, toffee, rum soaked fruits, toasty oak and floral tones on the nose. The palate is rounded and layered with toffee apple, dates, warming spices and sligfht char. The finish is long, sweet and spiced. Chewy caramel and raisins.

Colour
Deep amber with luminous copper-gold sheen and a touch of mahogany at the rim; a warm, honeyed glow, enriched by the cognac-cask finish.
Nose
A lush, inviting nose of vanilla and toffee, punctuated by rum-soaked fruits, toasted oak and delicate floral tones.
Palate
Rounded and layered, the palate reveals toffee apple and dates, cushioned by warming spices and a whisper of char. Chewy caramel and raisins linger, leading to a long, sweet, lightly spiced finish.
Finish
Long, sweet and spiced, the finish lingers with chewy caramel and raisin, warmed by cognac-cask influence and a gentle kiss of toasty oak.
