This is the eighth batch of single casks specially selected for the UK, each demonstrating the unique interaction of the wood, sprit, and subsequent flavour extension. Famed for his Sherry cask maturation epertise, Billy selected this exceptional Pedro Ximenez hogshead to be bottled. The smaller the size of this cask has injected an intense depth of both colour and flavour to Glenallachies honeyed spirit, offering up a palate abundant with dark chocolate shavings, rich butterscotch and hints of sweet spices. The resulting malt delivers a sophisticated drinking experience with a velvety texture, making for a truly indulgent expression.

Colour
Deep amber with mahogany depth and a warm coppery glow.
Nose
An inviting bouquet of baking spices, dark chocolate and heather honey, with bright citrus, ginger and a whisper of truffle oil.
Palate
Bursting with chocolate buttercream, plum jam and treacle followed by crystalised ginger, bananas and cinnamon, with caramel on the finish.
Finish
Long, luxurious finish of caramel that coats the palate, threaded with treacle and dark chocolate. A gentle ribbon of crystallised ginger and cinnamon lingers, leaving a velvety, honeyed finale that whispers its Pedro Ximénez maturity.
