Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
The barley variety Publican was grown in the 43ac field and was harvested by John and Sandy on the 28th & 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010. The whisky that went into this bottling came from twenty-five first fill ex bourbon barrels, which were filled in November and December 2010. Then stored in our dunnage warehouse until bottling in 2023.

Tasting Notes
Colour
Pale gold with sunlit straw and a delicate honey-amber glow.
Nose
Classic Daftmill on the nose, with the distillery character front and centre. Freshly mown grass and green herbs mingle with crushed nettles, while yellow and green fruits lend brightness. Subtle florals and their pollens drift in, adding a delicate, perfumed lift.
Palate
On the palate, a bright balance of sweetness with fruits, citrus curds and custard, supported by lightly drier notes of fruit teas, chamomile and linseed oil. Easy, sippable and approachable, with gentle depth that invites another thoughtful sip.
Finish
Medium-length finish that gracefully balances sweetness and dryness, leaving a refined bouquet of elegant floral notes behind.
