Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky. The barley variety Optic was grown in our south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa in the Summer of 2007.
This first fill Oloroso butt was selected by Francis Cuthbert from Daftmill and Jonny McMillan from BB&R.
It was distilled in our summer season being filled on the 5th August 2009 and has been bottled exclusively for the United Kingdom.

Tasting Notes
Colour
Deep mahogany-amber with copper-gold highlights and a warm honey-bronze glow.
Nose
Deep leaf mulch and cellar-earth form a rich backbone, woven with tobacco and cedar, plus hints of unlit cigars, sultana and pine resin. An old-school sherry depth pervades, immense and dense; with water, the earthiness broadens and herbal notes rise.
Palate
A little more peppery and spicy than the nose suggested, but still displaying some wonderful qualities of leather, tobaccos, damp earth, stewed dark fruits and even things like ruby ales and black olive bread. With water it becomes unexpectedly sweeter with caramelised muscovado sugars, lemon cough drops and dark fruit cordials.
Finish
Long and richly indulgent, the finish is built on dark coffee and chocolate notes, with lingering echoes of sweet dark beers, spiced breads, and raisins.
