Tasting Notes

Colour

Deep, dark amber with luminous coppery highlights and a mahogany-tinged glow.

Nose

Peat smoke threads through a maritime, sherry-soaked sweetness. Dark fruit—figs and raisins—dances with burnt sugar, toasted almond and cocoa. Salted caramel undercurrent, iodine and sea air mingle with vanilla-oak spice. The aroma is bold, elegant, and distinctly Islay: smoky, refined, with a sensuous sherry lift.

Palate

Oil-dark and mouth-coating, the palate opens with bold peat smoke woven through rich sherry fruit—prune, fig and cocoa—tempered by almond sweetness and a touch of salted caramel. Spices rise in concert: cinnamon, clove and black pepper, with a mineral coastal edge. A long, warming finish lingers, peat and cocoa tempered by saline notes.

Finish

Long, maritime peat carries a sherry-tinged sweetness to the finish: dark fig and raisin, cocoa nibs, orange zest, and toasted almond. Warming spice deepens as the smoke slowly fades, leaving a refined, salty oak echo.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
