Boann Madeira Cask Single Pot Still Irish Whiskey

Boann Distillery initially matured this whiskey in ex-bourbon barrels from Brown-Forman of Kentucky, made from American oak 200-litre (Quercus alba) casks with a heavy char. These casks were filled with a mixed mash bill single pot still distillate, including malted barley, unmalted barley, oats and rye, all Irish-grown and sourced locally.
In collaboration with the Madeira house Justino’s Madeira Wines, a selection of vintage Madeira casks was sourced, including Tinta Negro (1998 & 2000), Boal (1999) and Sercial (1999, 2000 & 2006) colheita wines. These casks were accessed through a long-standing relationship built on a previous special collaboration. The wines were fortified and underwent the canteiro process, where they are aged in barrel under naturally high temperatures, replicating the historic maritime ageing once experienced on Portuguese galleons.
All casks were previously 350-litre Cognac casks made from French oak (Quercus robur). These Madeira wines ranged from sweet to medium to dry, offering a wide depth and breadth of the terroir from the volcanic island of Madeira.
The label design of this expression reflects the importance of water in whiskey production, while also nodding to the flowing waters of the River Boyne and the North Atlantic Ocean surrounding the Madeira Islands.

Tasting Notes
Nose
A vibrant nose with enticing aromas of apples and peaches, followed by wonderful honey notes and a toasted oak spice, with a touch of floral fragrances playing nicely in the background.
Palate
A velvety smooth mouthfeel with peaches and cream on entry, overlaid with vanilla, walnuts, dried fruit cake and a delicate minerality throughout.
Finish
A long and crisp finish with fresh lemon oil and a lingering savoury spice. A tropical Atlantic Island voyage!
