Boann Pedro Ximenez Cask Single Pot Still Irish Whiskey

Boann Distillery initially matured this whiskey in Oloroso sherry hogsheads from Bodegas Garvey’s of Jerez de la Frontera, Spain. These 250-litre American oak (Quercus alba) casks were selected alongside George Espie and Ventura Nunez from the renowned Vasyma Cooperage. The casks were filled with a mixed mash bill single pot still distillate, including malted barley, unmalted barley, oats and rye, all Irish-grown and sourced locally.
The distillery then sourced exceptional PX casks — 500-litre butts discovered by partner cooperage R.L. Rodriguez in Andalusia, originating from the Mediterranean climate of Malaga. These casks had been part of a vintage PX solera system for over 60 years and were saturated with rich, syrupy PX wine.
A portion of these casks is made exclusively from chestnut, a very rare wood for maturing whiskey in Ireland. The Oloroso sherry matured single pot still was then finished in these vintage PX solera casks.
The combination of Oloroso sherry hogshead maturation and rich Spanish PX butts has created a deeply decadent and characterful whiskey.
The label design reflects the wood and grain of the cask, highlighting the use of these rare 60-year-old chestnut PX solera butts.

Nose
A decadent nose bursting with aromas of raisins and figs, beautifully backed by molasses, sweet caramel, and a touch of leather.
Palate
A sweet and savoury palate with a wonderful mixture of honey syrup, fine dark chocolate, crispy bacon and cracked white pepper.
Finish
Long and rich, with earthy caramel flavours that stay with you long after you’ve finished.
