Tasting Notes
Colour
Deep amber with coppery highlights and a warm honey-gold glow.
Nose
Ocean waves crash against rugged coastal cliffs, with marinated scallops seared by a pungent peat barbecue and seaweed tangled in tarry ropes.
Palate
Hot smoked meats, paprika and pickled ginger burst across the palate, while a mineralic flintiness threads through crisp apple and lemon sherbet to balance the saltier notes. Intense carbolic smoke grows, finishing with a long, resonant echo.
Finish
Unrelenting sweetened smoke lingers, unfurling into a very long finish. Coastal mineral notes hover beneath, with a warm tar-kissed sweetness that slowly recedes into a lasting ember.
