Tasting Notes
Colour
A radiant golden amber, warmed with sunlit honey and a coppery glow.
Nose
A sweet, candy-like opening with foam shrimps and strawberry bonbons, brightened by mineral notes of limestone and a breath of fresh seaside air. A soft, perfumed smoke lingers, like a distant beachside bonfire.
Palate
A complex duel of sweet and savoury: heather honey, cinder toffee and marshmallows intertwine with maritime rollmops and salted oat cakes, while scallops in butter with tarragon linger on the palate.
Finish
Burnt wholemeal toast smeared with chunky peanut butter, finished with a peppery spice that lingers on the palate.
