A classic Islay whisky from a mystery distillery (possibly Caol Ila?). Bottled at cask strength, this whisky features an abundance of vibrant ex-Bourbon cask influenced flavours (primarily vanilla and citrus), coastal notes, and plenty of smoke. One of just 304 bottles that were matured in an American oak hogshead.
The Alistair Walker Whisky Company was founded in 2018 and specialises in bottling Single Cask releases of Scotch Single Malt and Single Grain whiskies. The inaugural release of their flagship brand "Infrequent Fliers" was released in July 2019, with the focus being on lesser known distilleries that are of excellent quality, but have never been widely or consistently available. All small batch releases that are bottles at cask strength, with natural colour, and un-chill filtered.

Colour
Golden amber with sun-kissed honey tones and a warm coppery glow.
Nose
Coastal sea air with iodine and a salty lift opens to a bright plume of peat smoke. Vanilla and citrus oils from ex-Bourbon casks mingle with warm oak, caramel sweetness, and a hint of almond. Maritime brine threads through, leaving a clean, lingering sea-breeze aroma that hints at the cask strength depth to follow.
Palate
Full-bodied, oily palate delivering vanilla and citrus from ex-Bourbon, brightened by coastal brine and iodine. Peat smoke remains deftly integrated, threading through toasted oak, caramel, and subtle orchard fruit. At cask strength, it coats the mouth with warmth and a long maritime finish—ash, pepper and resin lingering long after the swallow.
Finish
Long, maritime finish with sea-salt and iodine evolving into vanilla and citrus from the ex-Bourbon cask. Persistent smoke lingers, carried on a warm oak spine, finishing with a crisp citrus glow and a subtle peppery edge.
