Tasting Notes
Colour
Deep sherry-bronze with luxurious mahogany depth and coppery-amber highlights, a ruby-tinted rim hinting at its wine-kissed richness.
Nose
Banana loaf aromas mingle with baked banana, demerara sugar and fig jam, while old-fashioned ginger fans the sherry-soaked raisins. Rum and raisin chocolate, bread pudding and brandy butter unfold, tempered by honey-roasted nuts and a sly savory note of cold beef consommé.
Palate
Big and chewy on the palate, with treacle tart and echlefechan tarts, ginger cake, walnut and mocha. Rum baba notes mingle with leather and meaty salami-like nuances, framed by peppery oak and warming cake spice.
Finish
Dry, savoury and long, this finish coats the palate with peppery meat, nutty fruit cake, dried figs and treacle, then hints of mince pies with brandy butter and a finale of old Jamaica ginger cake.
