Lightly peated and certified organic, non chill filtered and natural colour.
Interesting use of a variety of malt here (55% pilsner malt, 40% peated malt and 5% chocolate malt)
peated at 26ppm and aged in a combination of American, French and Spanish PX casks. Hand dipped wax tops finish off this quirky family owned distillery and one for the more open minded whisky drinker.

Tasting Notes
Colour
Deep amber with coppery highlights and mahogany undertones.
Nose
Soft peat smoke threads through a creamy malt base, with toast and honeyed barley and cocoa nibs from the chocolate malt. Subtle vanilla and dried fruit mingle with Spanish PX cask sweetness, while wisps of oak, spice and orchard fruit add lift, yielding a refined aroma that harmonizes peat with elegant sweetness.
Palate
Silky and medium-full, the palate blends subtle peat with creamy pilsner malt and a warm PX glow. Honeyed fig, dark chocolate, toffee and vanilla rise, carried by toasted oak and a peppery spine. The 26ppm peat stays refined against the PX influence, finishing long with bittersweet chocolate, dried fruit and a whisper of smoke.
Finish
Long, velvety finish driven by Pedro Ximénez sweetness—figs, raisins and dark chocolate—wrapped in a restrained peat whisper. Vanilla, spice and warm oak persist, fading to a cocoa-tinted glow that lingers gracefully on the palate.
